So you think you know how to make fried rice? Or rather, you're pretty good at eating it, but not so much at making it. First off, let's make sure we're referring to Thai Fried Rice and not Chinese Fried Rice. Thai Fried Rice appears lighter in color and is not as heavily doused with oils. Thai Fried Rice can include a greater range of vegetables, meats, and flavoring. It is no great mystery that rice is the main staple of Asian cooking, especially Thai. Thailand is one the world's largest producers of long grain and glutinous rice. For most Thai cooking, especially Fried Rice, we will be using Jasmine Rice. Jasmine Rice can be found at most grocery stores and Asian food stores. In the next few pages, I will be taking you step by step through the process of making a traditional Thai Fried Rice recipe.
